Preparation method

  • Heat the deep fryer to 180°C.
  • Immerse the noodles in the oil. Within a few seconds they will expand considerably. Remove them from the oil immediately.
  • Drain on paper towels.
  • Once drained, sprinkle with icing sugar and yoghurt powder.

Serving suggestions

  • As a crispy garnish on a dessert, e.g. with jasmine rice sorbet and mango.
  • Vary by replacing the icing sugar and yoghurt powder with salt and ground spices.
  • Delicious in a dessert with yuzu, white chocolat and kaffir lime leaves.
