Crown of goat
This is a variation on the classic crown of lamb.

Ingredients
- 1 rack of goat
- 50 ml butter, clarified or neutral oil
- 5 sprigs thyme
- 3 cloves garlic
- 1 sprig rosemary
- as needed butter
- as needed salt
Preparation method
- Clean the rack of goat as you would with a rack of lamb and sprinkle with salt.
- Bind the rack to form a ‘crown’.
- Fry the crown in oil or clarified butter until golden brown and then add the butter, thyme, rosemary, and garlic cloves.
- Baste the crown until it is cooked to satisfaction.
- Leave to rest in a warm place.
Serving suggestions
- Serve as a main course with potato, caper, aubergine, or artichoke components.
- Serve as a main course with mint, pea, or lemon components.
