Preparation method

  • Place a sheet of brick pastry on a chopping board.
  • Rub with the egg white.
  • Distribute the fresh herbs over the pastry.
  • Quickly place a second sheet of brick pastry on top and cut into the required shape.
  • Place on a baking sheet with a silicone sheet, and cover with a second silicone sheet.
  • Bake in an oven at 180°C until golden brown and crispy.
  • Store in an air-tight container with silicone granules.

Serving suggestions

  • As a cocktail snack.
  • As a crispy garnish in a composition of leek, celeriac, tomato, or aubergine.
  • Not only can you vary with the herbs but you can also add various spices to this component, such as curry, tomato, or paprika powder.
