Cucumber infused with gin

Use a fresh gin such as Hendrick's for this component. This gin is made with, e.g. cucumber, so the flavors will match perfectly. Green herbs such as dill will also work well in this component, add before compressing.

Preparation method

  • Peel the cucumber. Slice in half and then into rounds.
  • Compress with the gin. 

Serving suggestions

  • Use in a composition with components of fennel and oyster.
  • Use in a composition with components of scallop. celery, and radish.
  • Use in a composition with components of cheese, green herbs, and pear.
