Preparation method

  • Juice the offcuts of the cucumber.
  • Season to taste with salt, sushi vinegar, and pepper. 
  • Lightly thicken the cucumber juice with the xanthan gum.

Serving suggestions

  • As a component in a composition with salmon, apple, and ginger. 
  • As a component in a composition with hazelnut, yuzu, and scallops.
