elderflower vinegar

As needed:

 

Maldon salt

Preparation method

  • Peel the cucumber.
  • Cut the cucumber along the length into long strips using a mandolin or a meat slicer.
  • Place the strips into the elderflower vinegar and infuse for at least one hour.
  • Remove the cucumber from the vinegar and drain on kitchen towel.
  • Season to taste with Maldon salt.

Serving suggestions

  • Delicious served with oysters or smoked fish.
  • As a component in a composition with fennel, celery, and cream cheese. 
  • As a component in a composition with courgette, burrata, and apple.
