Preparation method

  • Peel the cucumber and cut in half lengthwise.
  • Remove the seeds with a spoon.
  • Cut the cucumber into the desired shape.
  • Sprinkle the cucumber with salt and drain for two hours in a colander (the salt will abstract the moisture and flavour the cucumber immediately). Use a towel to dry the cucumber lightly.
  • Mix with dressing, chopped chives, and chervil.
  • Season to taste with pepper.
  • Store at 4°C or serve immediately.

Serving suggestions

  • As part of a salad buffet.
  • As part of a cold starter or combined salad.
  • Use as garnish for jelly or aspic.
  • Variation tip: replace French dressing with another dressing, such as a yoghurt dressing, a lime dressing, a Riesling dressing, or a fennel dressing.
  • Variation tip: use the liquid drained from the cucumber as a dressing or vinaigrette ingredient.
