Cucumber salad
Simple salad with a basis of cucumber topped with French dressing.

Ingredients

Preparation method
- Peel the cucumber and cut in half lengthwise.
- Remove the seeds with a spoon.
- Cut the cucumber into the desired shape.
- Sprinkle the cucumber with salt and drain for two hours in a colander (the salt will abstract the moisture and flavour the cucumber immediately). Use a towel to dry the cucumber lightly.
- Mix with dressing, chopped chives, and chervil.
- Season to taste with pepper.
- Store at 4°C or serve immediately.
Serving suggestions
- As part of a salad buffet.
- As part of a cold starter or combined salad.
- Use as garnish for jelly or aspic.
- Variation tip: replace French dressing with another dressing, such as a yoghurt dressing, a lime dressing, a Riesling dressing, or a fennel dressing.
- Variation tip: use the liquid drained from the cucumber as a dressing or vinaigrette ingredient.
