Ingredients

cucumber

 

 

salt

1

 

shallot, finely chopped

½

tbsp

coriander, finely chopped

½

tbsp

chives, finely chopped

½

dl

olive oil

1

tbsp

Chardonnay vinegar

1

tsp

granulated sugar

Preparation method

  • Chop the cucumber into very fine dice (brunoise) and mix with a little salt.
  • Drain, and then add the other ingredients.

Serving suggestions

  • Excellent with North Sea shrimp and caçik.
  • Wonderful with good-quality feta cheese, green apple, and butterflied langoustines.
