Preparation method

  • Slice the daikon into 8cm cubes.
  • On the slicer, slice the cubes lengthwise into 2mm-thick slices.
  • Cut the slices into neat strips 3cm wide.
  • Plate two slices in an X.
  • Dress the prepared couscous with pepper, salt and sushi vinegar.
  • Plate the couscous in the middle of the X.
  • Fold the X into a closed package.

Serving suggestions

  • As a component in cold and hot dishes, e.g. with tuna, chicory, tomato or aubergine.
  • As a basis for an amuse-bouche, e.g. with basil mayonnaise and salmon roe.
