Ingredients

 

banana

coffee beans

ponzu 

Preparation method

  • Peel and chop the banana into chunks. 
  • Deep-fry at 160°C for three minutes. 
  • Mash the banana with a fork and season to taste with the ground coffee beans and ponzu. 

Serving suggestions

  • As a basis for a crèmeux, ice cream, or espuma. 
  • As a component in a dessert composition with citrus, coffee, and almonds.
