Preparation method

  • Preheat the deep fryer to 170°C.
  • Remove as many of the leaves from the Brussels sprouts as possible. Use the hearts for another preparation.
  • Deep fry the leaves until golden brown and drain on kitchen towel.
  • Season to taste with salt while they're still warm.
  • Then dry the Brussels sprouts leaves in a drying oven at 60°C for at least one hour.

Serving suggestions

  • Delicious in a composition with components of cod, potato, and nutmeg.
  • In a composition with components of wild boar, onion, and celeriac.
  • Combines well with scallops, thyme, and kohlrabi.
