Ingredients

As needed:

 

cauliflower hearts

 

 

sea salt

Preparation method

  • Blanch the cauliflower heart in plenty of salted water until al dente.
  • Then cool in iced water.
  • Remove from the water and pat dry.
  • Deep-fry the cauliflower hearts at 170°C until golden brown.
  • Lay on kitchen paper to absorb the excess fat.
  • Season to taste with the sea salt.

Serving suggestions

  • In a composition with a cauliflower crème, smoked almonds, Brussels sprouts, mushroom, and sunflower seeds, for example.
  • In a composition with a soft cheese crème, raw mushroom, chives, and hazelnut, for example.
  • In a composition with hard cheese, butler's steak, and beurre noisette, for example.
  • Finish as shown in the picture with almond crème and borage cress.
