DIY sushi ginger

While it's easy to buy all types of pickled ginger ready-made, if you make it yourself, you determine the flavour. You can play around with this recipe by adding more or less sugar or salt. The preserving liquid can also be used in all types of other preparations.

Preparation method

  • Peel the ginger and cut into very thin slices using a Japanese mandolin or a meat slicer.
  • Bring the water, vinegar, sugar, and salt to the boil and cook briefly.
  • Add the ginger and gently boil for about fifteen minutes.
  • Leave the mixture to cool. 

Serving suggestions

  • As a garnish for sushi.
  • As a flavour enhancer in compositions.
  • The liquid can be reused as preserving liquid for cucumber or carrots.
