Preparation method

  • Purée the blackberries.
  • Add the freshly grated ginger and the juice and zest of the lime.
  • Allow to drain on a superbag strainer or in a sieve lined with a cheese cloth.

Serving suggestions

  • As a basis for a fruit consommé.
  • As a light sauce for a dessert.
