Ingredients

all-purpose flour

whole milk

egg yolks

icing sugar

salt

clarified butter

Preparation method

  • Slowly add three-quarters of the milk to the flour while stirring until you have a smooth batter.
  • Add the remaining milk, egg yolk, icing sugar and salt.
  • Stir into a smooth batter and, lastly, add the clarified butter.Use the batter immediately.
  • Fry thin crepes in a small frying pan or a special ´flensjes´ pan with just a drop of oil.

Serving suggestions

  • As a basic ingredient for the classic crêpes suzette in combination with orange sauce.
  • As a warm component in a dessert, e.g. with warm cherries and vanilla ice cream.
  • As a warm component in a dessert, e.g. with baked apples and cinnamon.
