Earthy carrots with white truffle

This is a classic cooking technique which makes you appreciate the precision of craftsmanship. Nowadays, you can buy all sorts of baby vegetables but these are often staggeringly expensive. This is a fantastic combination that enhances the carrots' earthy flavour.

Preparation method

  • First scrape the carrots so that you can use the scraps later for other recipes.
  • Turn the carrots and remove the unattractive parts of the foliage.
  • Blanch the carrots so that they retain their bite and crunchiness.
  • Heat up in hot water just before serving.
  • Brush with the truffle essence and serve immediately.

Serving suggestions

  • As part of a vegetable side dish with a fennel, celeriac, onion, celery or conical cabbage component.
  • Vary by flavouring the carrots with other ingredients, such as cardamom butter and tarragon.
  • Use in a composition with components of pheasant, potato, and pumpkin.
