For this edible soil we use moscovado sugar, a dark brown sugar made with molasses. It enhances the flavor of the mushrooms in this edible soil.

Ingredients

Preparation method

  • Mix the dry ingredients in a planet mixer with a wire whisk.
  • Add the butter, bit by bit.
  • Slowly mix the ingredients until you have a crumbly dough. If the dough is too dry, add a little butter;
    if it is too moist, add a little flour.
  • Spread onto silicone baking trays in a thin layer.
  • Bake for 20 minutes in an oven at 100˚C. Keep in a tightly sealed container.

Serving suggestions

  • Use as a crust for meat or fish.
  • Use to cover a fennel, tomato, or celeriac mousse.
  • As part of an amuse-bouche, e.g. with a cauliflower panna cotta.
  • Use in a composition with components of mushrooms, rice, and eggplant.
