Elderflower espuma

A delicious way to use elderflower. The tonic in this recipe adds a subtle hint of bitterness to the espuma.

Recipe makes one siphon of 0.5 litres.

elderflower syrup

lime juice

Pro Espuma, refrigerated

Preparation method

  • Blend all the ingredients together using a hand-held blender, making sure you don't beat any air into the mixture.
  • Pass the mixture through a sieve and pour into a siphon of 0.5 litres.
  • Put one cartridge in the siphon and store in the refrigerator until use.

Serving suggestions

  • To finish off a strawberry gazpacho.
  • As a component in a composition with apricot, gin, and rosemary.
  • As a component in a composition with raspberry, yoghurt, and hibiscus.
