Preparation method

  • Pull vacuum the blueberries with 2g of salt.
  • Set it aside at room temperature for a week to enable it to ferment.
  • Strain the juice that is released.
  • Season the juice with salt and add oil until you have a vinaigrette.

Serving suggestions

  • As a component in a salad.
  • As a component in a fish dish.
  • Delicious when added to a beetroot dish.
