Preparation method

  • Crush the fig leaves and make an infusion by steeping the leaves in the milk and cream on a low heat.
  • Mix the egg yolks, sugar, and glucose syrup in a bowl using a whisk.
  • Strain the fig leave infusion and add to the egg yolk mixture.
  • Stir thoroughly and then allow to thicken in a pan on a low heat.
  • Cool down this composition quickly and then churn into ice cream in an ice cream maker.

Serving suggestions

  • As a component in a dessert with fresh berries and almonds.
