Preparation method

  • Boil the fig coulis together with the cinnamon sticks.
  • Add sugar (1) and the glucose and bring to the boil once more.
  • Mix sugar (2) with the pectin and add to the fig mixture.
  • Bring to the boil until the temperature reaches 106°C and then remove from the heat.
  • Mix the citric acid with an equal quantity of sugar and add to the mixture.
  • Stir thoroughly, remove the cinnamon sticks, and pour into a container.
  • Leave to harden in the refrigerator.
  • Cut into the required shapes and, if you like, dredge in lemon sugar (one part citric acid and ten parts sugar).

Serving suggestions

  • As a friandise.
