Preparation method

  • Separate the nameko mushrooms.
  • Scorch with a blowtorch.
  • Mix the pickling liquid, ponzu, and smoked olive oil to create a marinade.
  • Use this to marinate the nameko mushrooms.
  • Season lightly with salt before serving. 

Serving suggestions

  • In a composition with crispy pork belly, noodles, apple, and dashi.
  • In a composition with tuna, radish, and soya dressing.
