Preparation method

  • Heat the sugar for the caramel in a dry pan until a golden brown caramel is formed.
  • Deglaze with 125ml milk and cook to a smooth caramel.
  • Divide the caramel between four bowls.
  • For the flan mix the eggs, egg yolks, and the sugar.
  • Bring 375ml milk to the boil.
  • Remove the pan from the heat and slowly add the milk to the egg mixture while stirring.
  • Sieve the mixture and divide between the bowls.
  • But the bowls into a large oven dish.
  • Pour enough water into the oven dish to cover the bowls halfway.
  • Bake the puddings in an oven at 150°C for 45 minutes.
  • Take the bowls out of the oven and set aside to cool.
  • Remove the flans from the bowls just before serving so that the caramel runs down the pudding. 

Serving suggestions

  • As a component in a dessert composition with caramel and vanilla components.
