Ingredients

flank steak

As needed:

 

tarragon

As needed:

 

shallot, finely chopped

sweet pepper jus, fresh

Preparation method

  • Combine the sweet pepper jus, cumin, and honey and reduce to 250ml.
  • Sieve the mixture and strain through a cheesecloth.
  • Trim the flank steak.
  • Cut the steak into 1cm thick slices.
  • Lightly season with salt and pepper.
  • Fry briefly on the plancha.
  • Drizzle over the sweet pepper syrup, tarragon, and shallot to glaze the meat.

Serving suggestions

  • In a composition with feta.
  • In a composition with truffle shavings, raw mushrooms, and ox tongue.
