Ingredients

white wine vinegar

smooth French mustard

sunflower oil

finely minced onion

flat-leaf parsley, finely chopped

Worcestershire sauce

Preparation method

  • Mix the white wine vinegar, smooth mustard and salt in a mixing bowl. This will enable the salt to dissolve. Salt does not dissolve in oil, so adding it as a last ingredient would not work.
  • Add the oil in a thin stream while continuing to stir the mixture slowly with a whisk. This will cause the oil and vinegar to emulsify.
  • Next, add the onion and parsley.
  • If desired, season with Worcestershire sauce. 

Serving suggestions

  • As a basic ingredient for other dressings, such as Roquefort or another blue cheese dressing.
