French toast

This classic dessert is best prepared using stale bread, so that the liquid can be absorbed well. This ensures that the French toast doesn’t become soggy and retains its shape. Because of the use of stale bread, it is a perfect Waste to Taste component!

Ingredients

  • 300 stale bread
  • 60 whole egg
  • 60 egg yolk
  • vanilla bean
  • 500 ml milk
  • 50 sugar
  • lemon, juice and zest

Preparation method

  • Beat the egg yolks with the sugar until light and fluffy.
  • Add the milk, lemon, and vanilla seeds and soak the bread in this mixture.
  • Heat a little butter in a frying pan and fry the slices of bread over medium heat on both sides until golden brown.
  • Serve the French toast while hot and sprinkle with sugar.
  • If you want to make the French toast especially crispy, caramelise the sugar with a kitchen blowtorch as when making crème brûlée.

  • Variation tip: use brioche, Frisian sugar bread, or ginger cake.
  • As a dessert on its own with a cube of butter.
  • As part of a dessert with cinnamon ice cream and honey.
  • As part of a dessert with components of thyme and lemon.
