French toast with Glühwein

A variation on a Spanish classic, Torrijas al Vino, but using Glühwein (mulled spiced wine) instead of red wine. Use stale bread and it is a perfect Waste to Taste component.

Glühwein (mulled wine)

egg yolks (or 150g, pasteurised)

white bread, stale

Preparation method

  • Cut the vanilla bean in half lengthwise and scrape out the marrow.
  • Combine the milk with the Glühwein, egg yolks and sugar and whisk together well. Store in the refrigerator until use.
  • Cut the bread into the desired shape and transfer to a rimmed tray.
  • Pour as much of the batter onto the bread to barely cover. Allow to soak for 20 minutes.
  • Transfer the bread to a rack to drip.
  • Fry the bread in clarified butter until golden brown. Drain on paper towels.
  • Sprinkle with a mixture of the cane sugar and cinnamon.

Serving suggestions

  • As a hot winter snack.
  • As a dessert with vanilla ice cream topped with whipped cream.
  • As a dessert with ice cream and chocolate sauce.
