Preparation method

  • Rinse the trout well under running water and pat dry with kitchen towel. Also dry the inside of the fish.
  • Season to taste with salt.
  • Coat the trout in the flour and dust off excess flour with a small brush.
  • Fry the trout in clarified butter on both sides until golden brown.
  • Take the fish out of the clarified butter and fry the almond shavings in the butter.

Serving suggestions

  • Serve in the classic Lucerne way (à la lucernoise) with tomato wedges, capers, and green herbs.
  • Serve with components of potato and a green salad.
