A refreshing celery component that can be used in savoury and sweet dishes. The fine ice crystals in the pastille create a wonderful eating experience.

rice vinegar

Preparation method

  • Use a juicer to make celery juice.
  • Use 50g of the juice, add the sugar and lime juice and heat up gently.
  • Dissolve the soaked gelatin in the mixture.
  • Mix with the rest of the juice and season to taste with salt and a little rice vinegar.
  • Pour the juice into silicone moulds and place in the freezer to set.
  • Serve immediately after removing them from the freezer.

Serving suggestions

  • As a basis for an amuse-bouche or dessert.
  • As an accompaniment to a dessert with citrus, crème fraîche, and cucumber.
