This coulis is flavoured with black cardamom pods which have a more subtle flavour than the green variety.

Galia melons

Preparation method

  • Remove the seeds from the melons and scoop out the flesh.
  • Dampen a passing cloth and lay it in a large sieve placed on top of a bowl.
  • Roughly chop the cardamom and place it in the passing cloth.
  • Purée the melon flesh and pour it into the passing cloth.
  • Fold the cloth closed and set it aside weighted down for a day.

Serving suggestions

  • As part of a dessert, e.g. with red fruit or various types of sorbet.
  • As part of a pre-dessert, e.g. with a melon foam.
