Ingredients

galia melon

red chilli pepper, in thinly sliced rings

coriander, fresh, finely chopped

½

 

lime, juice

garlic, chopped

olive oil

Preparation method

  • Combine all ingredients except the melon and set aside in the refrigerator.
  • Remove the pits from the melon and cut off the peel.
  • Slice ribbons from the melon 3mm wide and as long as possible.
  • Marinate the ribbons just before serving to preserve their bite.

Serving suggestions

  • As a component of a starter or salad, e.g. with glazed pike perch or fried langoustines.
  • As part of an amuse-bouche, e.g. with a tuna cube marinated in Asian flavours.
