Ingredients

butter, room temperature

chives, finely chopped

cloves

garlic, finely chopped

 

 

salt and pepper

 

 

lemon juice

Preparation method

  • Beat the butter in a planetary mixer until white.
  • Add the chives and garlic and mix thoroughly.
  • Season to taste with salt, pepper, and lemon juice.
  • You could pipe the butter, roll it up, or press it into a mould as in this recipe.

Serving suggestions

  • As a spread for bread.
  • As a flavour enhancer in potato and vegetable purée.
  • As a flavour enhancer in vegetable dishes.
  • As a garnish or sauce on pan-fried meat or fish.
