dried chilli peppers

sherry vinegar

Preparation method

  • Peel the garlic cloves and crush finely.
  • Bring the vinegar and the sherry to the boil.
  • Pour the liquid over the garlic and the dried chilli peppers.
  • Set aside to infuse for at least 12 hours.
  • Strain the liquid and store in a sealed bottle.

Serving suggestions

  • Adds a little something extra to a dish. Try varying the type of vinegar you use.
