Gin & tonic espuma

Gin & tonic is an excellent aperitif. Restaurant Sense* combines this espuma with a light crème of goat's cheese, oyster leaf and crunchy sourdough bread. It is served as an "arrivé" to welcome your guests.

Preparation method

  • Mix all the ingredients and transfer to a 0.5l siphon.
  • Put 2 chargers in the siphon and store in the refrigerator until needed.

Serving suggestions

  • As an arrivé or to embellish a dish.
  • Can be combined with sweet as well as savoury ingredients.
