egg whites

gelatine, soaked in cold water

Preparation method

  • Heat the sugar, tonic and glucose to 121°C.
  • Beat the egg white into stiff peaks in a degreased bowl.
  • Slowly add the warm syrup to the beaten egg whites.
  • Dissolve the soaked gelatine in the gin and add this to the egg white mixture.
  • Beat the mixture cold.
  • Pour the mass into a gastronorm container, spread with a moist pallet knife.
  • Let stiffen in the cooling.
  • Portion as desired.

Serving suggestions

  • As a friandise or to embellish a dessert.
  • Combines excellently with goat's cheese and oyster leaf.
  • Use in a composition with components of mango, banana, and avocodo.
