Preparation method

  • Put the apples through a juicer and season with a pinch of ascorbic acid and lemon juice.
  • Thicken with xanthana.

Serving suggestions

  • Serve as a drink, without any additives.
  • As a basic ingredient in a mousse, gel or sorbet.
