Ingredients

Preparation method
- Soak the lentils in plenty of cold water for 12 to 24 hours.
- Put the soaked lentils in a pan with the vegetable stock, lime leaf, and black garlic and bring to the boil.
- Cook the lentils slowly and then drain in a fine sieve once done.
- Remove the lime leaf and blend the mixture until smooth in a food processor or thermo blender.
- Add the other ingredients and season to taste with salt and pepper.
- Set aside to cool and then refrigerate until use.
Serving suggestions
- With toast or crudités to accompany aperitifs.
- Delicious in a starter with fresh vegetable components.
- Can be used as a spread in rolls and sandwiches.
