Ingredients

green lentils

500

ml

vegetable stock

1

 

lime leaf

1

clove

black garlic

1

 

lemon, juice

tahini

ml

olive oil

As needed:

 

salt and pepper

Preparation method

  • Soak the lentils in plenty of cold water for 12 to 24 hours.
  • Put the soaked lentils in a pan with the vegetable stock, lime leaf, and black garlic and bring to the boil.
  • Cook the lentils slowly and then drain in a fine sieve once done.
  • Remove the lime leaf and blend the mixture until smooth in a food processor or thermo blender.
  • Add the other ingredients and season to taste with salt and pepper.
  • Set aside to cool and then refrigerate until use.

Serving suggestions

  • With toast or crudités to accompany aperitifs.
  • Delicious in a starter with fresh vegetable components.
  • Can be used as a spread in rolls and sandwiches.
