Ingredients

garlic, smoked

oranges, zest

lemons, zest

Preparation method

  • First, prepare the marinade. Finely chop the smoked garlic and green herbs and mix with the olive oil and citrus zest. Season to taste with Maldon salt.
  • Heat up a grill, barbecue or grill pan.
  • Cut the chicory in half lengthwise and coat all around with neutral olive oil. The best way to do this is in a bowl with your hands.
  • Grill the chicory on the cut side and turn when dark-brown stripes appear. Season to taste with salt and pepper.
  • Sprinkle the chicory with the citrus marinade and transfer to the oven for further cooking, if desired.

Serving suggestions

  • As a vegetable garnish, e.g. with sautéed pike perch and cauliflower cream.
  • As a basic ingredient in an entremets course, served with quinoa and a jus made from roast carrot.
