Grilled dab

More flavour is retained when fish is prepared without filleting it first. Rubbing the dab with olive oil and seasoning it after it has been cooked produces fish that is grilled to perfection.

Preparation method

  • Rub the dab with olive oil.
  • Heat the pan and grill the dab on both sides.
  • Season to taste with salt and pepper.

Serving suggestions

  • As a main course with coarse potato purée with olive oil and a carrot ragout.
  • As a main course with tomato, fennel, cauliflower, cucumber, chicory or conical cabbage components.
