white bread, in long slices

soft goat's cheese

spinach leaves

olive oil or clarified butter

Preparation method

  • Spread the goat's cheese on one side of an even number of the slices.
  • Sprinkle with honey.
  • Divide the spinach leaves among these slices, and top with a second slice of bread with goat's cheese.
  • Seal in a plastic container and let the sandwiches firm up, slightly weighted down, in the refrigerator.
  • Slice into neat triangles.
  • When ready to serve, fry the sandwiches quickly on each side in a little olive oil or butter.
  • Serve hot with soup, a salad or as part of a cheese board.

Serving suggestions

  • As a mini-snack or amuse-bouche.
  • As a component in a salad or starter, e.g. a salad with goat's cheese and bacon bits.
  • As a side with a soup, e.g. a cucumber or roasted sweet pepper soup.
