Preparation method

  • Place the salt in a dry pan and roast until it turns a light grey colour.
  • Transfer the salt to a mortar.
  • Roast the sesame seeds until golden brown and grind them together with the dried garlic and salt in the mortar.
  • Cut the leeks into slices on the diagonal and grill to produce a cross-hatched pattern.
  • Roll the sides of the grilled leeks in the gomashio.

Serving suggestions

  • This leek component goes well with egg dishes, such as poached egg.
  • As an aperitif snack.
