Grilled lemon

This is an excellent preparation method for concentrating and intensifying the flavour of lemons. The sugars caramelise and part of the moisture will evaporate in the oven, causing the flavours to become even more concentrated. Grilled lemon is a lovely accompaniment to flat fish fried à la meuniere.

Preparation method

  • Cut the lemons in half and grill for a few minutes on the cut side on a hot grill pan or water grill.
  • Insert a fresh bay leaf into each lemon, sprinkle with pepper and drizzle with maple sugar or syrup.
  • Cook in an oven at 90°C for approx. 30 minutes.

Serving suggestions

  • Serve with fish, shellfish or crustacean dishes.
  • As a basic ingredient in a grilled lemon sorbet or as an ingredient with which to infuse a sauce.
