Preparation method

  • Place all the ingredients, except for the pineapples, in a pan and whisk well with a whisk.
  • Bring to the boil and then remove the pan from the heat.
  • Cool back to room temperature.
  • Clean the pineapples and cut into slices. 
  • Place the pineapple slices in the pickling liquid for twelve hours. 
  • Pat the pineapple slices dry well and grill on a charcoal barbecue.
  • Portion as desired. 

Serving suggestions

  • As a component in a composition with glazed sweetbread, prawns, peanut sauce, and turnips. 
  • As part of a barbecue or buffet.
