Preparation method

  • Bring the temperature of the barbecue or Big Green Egg to 220°C.
  • Cut the tomatoes in half and season to taste with salt and pepper.
  • Place the tomatoes on the grill of the barbecue with the cut side facing down.
  • Grill the tomatoes for two to three minutes.
  • Turn them over and grill briefly on the other side.
  • Serve the tomatoes with the grilled side facing up and sprinkle over a little olive oil, balsamic vinegar, and salt and pepper. 

Serving suggestions

  • As part of an amuse-bouche with burrata and basil.
  • As part of a composition with aubergine and artichoke.
  • As a side salad with grilled meat or grilled fish.
  • As a basic ingredient for a cold or warm tomato sauce.
