Grilled radishes with citrus oil

Radishes are generally prepared raw and cold, but they are also delicious stewed, fried or grilled. This recipe makes use of a fruity marinade of olive oil and citrus to contrast the sharp taste of the radish. This combination is best after the radishes have been grilled.

Ingredients

Preparation method

  • First, prepare the marinade. Finely chop the smoked garlic and green herbs and mix with the olive oil and citrus zest. Season to taste with Maldon salt.
  • Heat up a grill, barbecue or grill pan.
  • Clean the radishes and cut in half vertically.
  • Grill the radishes on the cut side and turn when dark-brown stripes appear. Season to taste with salt and pepper.
  • Sprinkle the radishes with the citrus marinade.

Serving suggestions

  • As part of a salad, e.g. with lamb's ear lettuce, salmon and aubergine.
  • As a vegetable garnish, e.g. with cod, conical cabbage or roasted tomatoes.
