Ingredients

Preparation method

  • Grind the meat of the chicken thighs through a meat grinder twice, first on the coarse setting and then on the fine setting.
  • Season the meat with salt and pepper.
  • Make small meatballs and skewer them onto wooden or steel skewers.
  • Combine the soy sauce, sake, mirin, and sugar to make a marinade.
  • Roast the skewers on a charcoal barbecue, basting with the marinade occasionally.
  • Sprinkle with lime juice and top with some grated zest.

Serving suggestions

  • As a snack.
  • As a component in a main dish with rice or noodles.
