Guacamole (original recipe)

A world-famous, inexpensive and very easy to prepare sauce from Mexico. True Mexicans swear by the basic ingredients: avocados, one tomato, half an onion, half a bunch of coriander (10-12 sprigs) and the juice of one lime. No chilli, no garlic, no sugar and no shallots! The reason for this is that these are considered too expensive and superfluous. Neither do the Mexicans add crème fraîche, mayonnaise or sour cream. The addition of these ingredients originated in Californian cuisine. But whatever you do, make sure you use the right avocados! The best ones to use are the dark-skinned Hass avocados. They may look less attractive, but they are delicious! Of course, you can always vary with the ingredients, but this recipe is the original one.

Preparation method

  • Clean the avocados and cut into cubes.
  • Dice the onion, peel the tomatoes and finely dice (brunoise).
  • Finely chop the coriander.

Serving suggestions

  • As a dip with home-made crisps (potato or vegetable).
  • As a basic ingredient in crèmeux, sorbets or panna cottas.
  • As a component in a composition with mackerel, tomato, citrus fruit or yoghurt.
