salt and pepper

Preparation method

  • Portion the hake fillet, season lightly with salt, dry on kitchen paper.
  • Poach for a few minutes in the squid broth.
  • Season to taste with salt and pepper.

Serving suggestions

  • As a component in a salad of octopus and chorizo.
  • As a component in a composition with paella rice and shavings of fennel.
