salt and pepper

Preparation method

  • Cut the halibut into strips of about 100 grams and season with salt and pepper.
  • Pull vacuum the halibut strips with the lobster oil.
  • Cook in the Roner at 60°C for approximately 20 minutes.

Serving suggestions

  • In a composition with components of garlic, coriander, and chilli pepper.
  • In a composition with components of rice, tomato and saffron.
  • As an entremets or main dish with components of potato, artichoke, asparagus, celery, citrus, courgette, green herbs, fennel, chicory, and carrots.
