halibut, skin on

As needed:

 

peanut oil

 

 

salt and pepper

Preparation method

  • Season the halibut fillet with salt and allow to stand for a few minutes.
  • Pat the fillet dry and lightly rub the peanut oil onto the skin.
  • Grill the fillets on the barbecue skin-side down.
  • Season with freshly ground pepper.

Serving suggestions

  • As an entremets or main dish with components of potato, artichoke, asparagus, celery, citrus, courgette, green herbs, fennel, chicory, and carrots.
